How to make a Vegan broccoli soup.
Broccoli contains several phytochemicals (flavonoids, glucosinolates and others). Glucosinolates in turn store various indoles and many isothiocyanates, which have a large potential carcinostatic. Included in broccoli are following isothiocyanates: sulforaphane, 3-Methylsulfinylpropylisothiocyanat, 3-butenyl, allyl isothiocyanate and 4-Methylsulfinylbutylisothiocyanat.
In particular, for the ingredient sulforaphane (SUL, 1-isothiocyanate-4- (methylsulphinyl) butane) was demonstrated in several studies in cell culture and animal testing. Anti-Cancer effect and an enhancement of chemotherapy especially in pancreatic cancer and in prostate cancer.
And the bottom line is that broccoli is very healthy.
Ridiculously Easy Cream of Broccoli Soup
You can vary the flavor of this basic soup by adding a teaspoon of thyme, basil, or any herb during the first step. For a delicious change of pace, try the curried variation at the end of the recipe.
- 1 bunch broccoli (about 1 1/4 pound or 6-7 cups chopped)
- 1 large onion, chopped
- 2-4 cloves garlic, peeled
- 4 cups vegetable broth (I used Imagine’s No-Chicken)
